The girls absolutely loved this paella recipe. You would think that sea food is a complete no no for young children but my 3 year old twins and 6 year had clean bowls at the end of the meal and it is definitely going to have a regular spot in our meals. I have served a variation of this for a few years without the seafood so I thought I would try something a little more authentic. I bought a pack of mixed seafood where the shells had already been removed. This definitely made it more palatable – both for me to cook and the girls to eat.
Ingredients
- 150g chicken breast
- 100 g chorizo
- 2 peppers
- 150g green beans
- tsp garlic
- 2 tsp smoked paprika
- 175g paella rice
- 1 litre of chicken stock
- 1 pack of pre-cooked sea food
- lemon
Method
Fry the chicken in oil until lightly golden add the chorizo for the last minute.
Remove from pan. Fry the onions in the garlic, when golden add the green beans and peppers.
Add the rice, chicken stock and paprika and return the chicken and chorizo to the pan.
Simmer for about 15 minutes.
Stir in the sea food and simmer for about 3 more minutes.
Serve with a squeeze of lemon.
This was a good recipe for Molly to help with as she enjoyed the chopping and she was very intereted in the sea food and what it is.
