Pancakes for Christmas Breakfast

There could only be one choice of book to read by Tomie DePaola and that is ‘Pancakes for Breakfast’. Published in the year I was born. It really stands the test of time. It’s a wordless book and so great for little ones to practice their storytelling skills and make up their own story. It also works well to use to talk through the stages of making pancakes.  Here’s our Snowman pancake recipe.

I would love to say I make pancakes for breakfast regularly – but unfortunately that isn’t the case. I like to have pancakes for special occasions so in this post we have designed pancakes which would be good for Christmas morning breakfast – what’s more fitting than snowmen!

Our Snowman pancake recipe for Christmas Day breakfast

It’s not often we stay at our house for even part of Christmas Day so I want to make breakfast really special. I’m not very good in the morning so for this I will have to be a bit more organised and make everything ahead. 

Pancake batter is great because it stores well in the fridge and it’s just the apple and banana which I will need to cut on the day as long as everything else is ready.

Ingredients

For the Pancake

  • 110g/4oz plain flour, sifted
  • pinch of salt
  • 2 eggs
  • 21/2 pint of milk
  • butter/oil for the pan

For the toppings

  • sugar
  • icing sugar
  • raspberries
  • blueberries
  • apples
  • bananas

Method

  • Sift the flour and salt into a ball.
  • Gradually whisk in the egg and the milk – whisk for a few minutes to make sure the batter is very smooth.
  • Heat the butter or oil in a pan and make sure it is hot.
  • Pour the batter into a squeezy bottle to make it easier to create a shape. Spread quickly onto the pan into a snowman shape. Alternatively you could make two small round pancakes – one for the head and one for the body.
  • When you can lift the pancake with a spatula then it is time to flip it over. Cook for less time on the second side.
  • Decorate the pancake with your favourite toppings. To make a snowman cut up an apple to make the hat, use blueberries or raisins for eyes and buttons and cut a banana to make a carrot shaped nose.

To make a scarf I made some raspberry sauce by heating raspberries with sugar and a small amount of water for about five minutes. Alternatively you could use jam, syrup, chocolate spread or any other favourite sauce. Just spread into a scarf shape.
