Rudolph Mincemeat Cup Cake Recipe

We used this Rudolph Mincemeat Cup Cake Recipe last week. This is a great way to use up any left over mincemeat from the Christmas cake or pudding. The mincemeat makes the cupcakes have a more festive taste without being as rich as a whole mince pie or fruit cake – so perfect for children. The twiglets are just decoration though as they don’t taste particularly nice with the cake.

You Will Need

For the cake

  • 4oz butter
  • 4oz caster sugar
  • 4oz self raising flour
  • 2 eggs
  • 5oz mincemeat

For the decoration

  • butter icing
  • brown food colouring
  • Twiglets
  • Mini marshmallows
  • Black icing
  • Glace cherry
Rudolph Mincemeat Cup Cake


  • Preheat oven to 180/ Gas mark 4
  • Mix all the cake ingredients until smooth. Bake the cakes for 20 mins.
  • Once cooled, decorate using the butter icing.
  • Add twiglets for antlers
  • Add a cherry for the nose
  • Put dots using the black icing in the middle of the marshmallows for the eyes
