It is nearly Summer! Well looking outside you wouldn’t really know it – but honestly Summer is almost here. If you say “Summer” I say “ice cream”. A day without ice cream is a day lost but unfortunately ice cream is full of fat and sugar. I like to have a healthy alternative to ice cream which is just as rich and creamy and still cools you down but so much healthier.
I found a great recipe for healthy ice cream in one of the Annabel Karmel baby weaning books. Well I say recipes but really all you need is one ingredient: bananas. Once you have started with the banana you can add other fruits which go well with the banana. They are all better with sprinkles. The original recipe said to blend after the banana is frozen but I have found that this is quite hard to do and prefer to blend first and then add all the ingredients. You do need to do this quickly though or the banana will start to turn a bit brown.
It really is an incredible recipe – even though I’ve made the homemade ice cream I forget that it is only made with bananas and I feel like I’ve had a really indulgent treat.

Banana Ice Cream
You will need:
- 1 bunch of bananas
That’s it – all you need to make creamy delicious ice cream. Don’t believe it? I didn’t either – but honestly you have to try it. All you have to do is:
- Peel a bunch of ripe bananas.
- Blend
- Freeze for at least four hours or overnight.

Strawberry Ice Cream
Use the same recipe as above but include a handful of strawberries.
Chocolate and Peanut Butter
I have to say this is my favourite of the recipes. The addition of peanut butter and chocolate makes it taste incredibly indulgent but really only add a few extra calories.
Simply add 2 tablespoons of peanut butter and a teaspoon of chocolate powder. You can also put sprinkles on the top.
Honey Ice Cream
This adds a bit of sweetness to the ice cream.
Add 2 tablespoons of honey to the mix before blending.

Sharon Fruit and Yogurt
Sharon fruit (Persimmon) is a really lovely mellow flavour which blends nicely with the banana.
- 6 bananas
- Add the flesh of 1 sharon fruit
- 1 tbs of honey
- 2 tablespoons of natural yogurt.
